Hello friend this is a vegetable soup made with Ceylon Spinach and fluted Pumpkin leafs(known as ugu leaf in Nigeria).
Recipe
Ceylon Spinach and fluted Pumpkin
Scotch bonnet pepper
Onion
Crayfish
Fish
Red oil
Chicken
And your seasonings
Local spices (nune and okpehe)
Procedure
Wash and slice your vegetables and set aside,
Blend your onion, pepper, crayfish, nune and okpehe and set aside as well.
Steam your chicken till it's tender. You can choose to fry it or just use it cooked.
Put some red oil in a pot and allow to heat for some seconds, then pour in your blended ingredients and fry for about 5min. When done, pour in your chicken stock, at this point , you can add your seasonings to taste then allow it to boil for about 2min, then add in your vegetables. The fluted Pumpkin first,allow it to cook for about 2min then add you Ceylon Spinach and allow to cook for about 30sec. Then your soup is ready.
Make sure not to add too much water as your soup don't need to be watery.
