Mechanical switch. In modern fridge I suppose they even have sensors e.g new amazon stores who reduce temp if the door is opened long enough.

The light bulb in a refrigerator is connected to a magnetic switch, which is activated when the door is opened. When the door is closed, the switch turns off the light bulb. It's that simple! 😄
