Yesterday, was my youngest child's 18th birthday! That's right, this hobbit's children are fully grown! I can't believe that both of my babies are full-fledged adults, it boggles the one still functioning brain cell in my mind!
It also makes me giggle on occasion because I don't really look old enough to have children of that age, but that just makes it more fun to be honest.
The boy still has half a school year to go before he graduates and heads out into the world, so it's not going to be a big change...yet...
I was talking with a fellow mom last night, and she expressed how strange and cool it was that both of my children were now adults. I told her I felt that way too and have been thinking about it a lot, as for the last two decades I have been consumed with raising and tending to my offspring. In fact, I told her the best way I've felt to describe it is like finishing a very demanding yet fulfilling marathon. I'm still at the race, just basking at the finish line and ready to hit the after party and deal with the press (The love and advice part of being a parent to adults).
But, this isn't to be a post about transitioning into a parent of adult offspring, it was supposed to be a missive about the boy's amazing birthday lunch, which I really want to share with you all!
A PNW fella expanded Cascadia Pizza Co in a food truck to our area, complete with a woodfired oven a year or two ago. His food and service was so amazing that now he has not only a herd of pizza trucks but also two brick and mortar locations in our area. His newest locale is in an old refurbished building a town down the road from us, and our son wanted to have his birthday lunch there.
We were not sad about this desire.
The pizza is wood-fired Neopolitan crust and it is just so wonderful. The boy got a pizza named The Butcher, which was rather meat laden. My daughter and I shared The Tahoma which was a garlic butter-based sauce, chicken, goat cheese, pesto drizzled foodie delight.
The hubs is not a pizza enthusiast (the kids and I have burned him out because there is never enough pizza for us three), but neatly so, Cascadia does wood fired wings, so while we ate out pizza and breadsticks, he happily munched on buffalo wings dipped in house made blue cheese dressing.
We were sorta good and shared a couple Caesar salads too. They were served on pizza pans, which really made my day.
Another interesting and endearing thing that happened was when the pizza chef brought out the Tahoma pizza my daughter and I were going to share he said he had another one in the oven for us because that one didn't turn out right. I looked at him and said it looked delightful, but apparently the topping ratio was out of balance so a short while later he brought us another Tahoma pizza. I felt slightly spoiled! I'm sure my daughter's roommates felt that way too as I sent the entire pizza home with her!
But that was part of what made Cascadia Pizza Co so special, the attention to detail, warm and cozy atmosphere, and absolutely splendid food! The boy very much enjoyed his birthday lunch and I am so tickled that Rathdrum, our neighboring town, got such a fabulous place to go get a tasty bite to eat!

If the second pizza had turned out right, you both would have had more to eat each
