As far as I can tell, they never ran out of energy, and they only stopped working when the lightsabre itself was destroyed

Even the elegant weapon from a more civilized age needs to be charged, although not that often. They must have really needed charging during the Clone Wars. Then there's that serious cutting done by Qui-Gon Jinn and Obi-Wan Kenobi in EP1.
