Are these oyster mushrooms? Not my favorite, but I do harvest some wild ones now and again for mushroom soup. I haven't grown any mushrooms yet, but looking to start soon!

It's all how you cook them! And the pink ones are so yummy, my favourite, then yellow, then blue.
