I'm not a huge fan of what one of my family members derisively labels "public meat," but I think this cut came from a relatively local source as opposed to a distant gross feedlot, too. The potatoes were from the family garden, as mentioned above. Carrots, onions, and celery were not, but could be grown at home or bought at a local farmer's market.
