Instructions:
- Preheat your oven to 400°F (200°C).
- In a small bowl, mix together the olive oil, garlic, rosemary, thyme, salt, black pepper, paprika, cumin, and coriander.
- Place the lamb chops in a large baking dish or a rimmed sheet pan. Brush the garlic-herb mixture evenly over both sides of the lamb chops, making sure they're well coated.
- If using red wine, pour it into the bottom of the baking dish or sheet pan, making sure the lamb chops are not submerged.
