My favourite snack is pakoras.
Make a batter of chickpea flour, salt and water. I usually add a little turmeric, black pepper, cayenne and minced garlic, but that's optional.
Chop or slice vegetables like carrots, bell pepper, cauilflower, boiled potatoes, spring onion, mushrooms, asparagus, zucchini... into bite sized pieces. Dip the vegs in the batter and deep fry a few pieces at a time until golden and crispy. To use up even the last remains of batter I often chop up some red onion finely and mix it in - more onion than batter - then use a spoon to drop small lumps of the batter-onion mix into the oil.
Eat while hot, as they are or with a dipping sauce - for example a mix of soy sauce, mirin, vinegar, garlic and ginger.
