This gingerbread looks so delicious! I especially love the addition of the plum jam and raisins, it gives the cake such a unique and interesting flavor. I also appreciate that you didn't cover the cake in cocoa glaze to cut down on calories, the powdered sugar topping looks perfect. The photos of the process are also very helpful, it's great to see how you lined the baking pan with wet baking paper to avoid wrinkles on the cake. I'll definitely have to try that trick myself. Thanks for sharing this recipe with us, I can't wait to give it a try.
