Desserts!!! yes that is the place to start, and the number one dessert to start to fully utilize your kitchen is Lemon Meringue Pie. That is a heavenly dessert and when it is homemade and you learn to do the lemon part right, you will never find anything better tasting in a store or bakery. It is somewhat complicated in that you really need to watch and stir and have all the ingredients prepped to add, but when you get that lemon filling done right and take that first bite when it cools it just explodes in your mouth. Be warned though it takes a lot of sugar, so unfortunately now I can not make it any more because I would totally blow my blood sugar numbers out the door, but god I loved the taste. Even our little chihuahua's loved the lemon taste, well one of them, the others preferred the meringue part.

Are lemon Meringues easy?
I like a good meringue - and I would also like to learn to make a decent Key Lime Pie also.

I don't think I would call them easy, you have to stand and stir a lot, and the syrupy sauce is kind of like lava, you definitely do not want it splashing or dripping on you skin.

Ingredients are pretty basic though, but you really need to use real lemons not the bottled stuff because you also need some grated lemon rind.

I would imagine Key lime pie filling stuff is pretty similar, but I have never made that before.

I will make and have some more one day, but right now I am doing really good on my blood sugar numbers so I do not want to screw them up.
