DALOYDOY: THE LEGENDARY DELICACY NO. 1

Presenting the easiest yet very delicious delicacy of Cebu – the Daloydoy.

Last Sunday, February 18, I feel like the need of a long-lost taste. A taste of something old but gold. Something to replace my regular meal. Not actually just any kind of food and especially not meat or fruits or veges.

When I happen to eat my breakfast, I stumble on the thought of our cooked corn meal, and presto! I recalled about such delicacy with multipurpose – the Daloydoy.

Daloydoy is a native delicacy here in our place as it could replace one’s meal, appetizer, snack, for gifts, and even for picnics. Such delicacy is very easy to prepare and cook as it only need 3 major ingredients: coconut milk, corn powder or flour and sugar. It is not unique but it’s flavor and nutritious for all ages.

Now, to prepare a Daloydoy which is good for 3 to 4 persons, you only need these three ingredients with specific proportions:

  • 2 to 3 cups corn powder (tiktik) or flour (depending on your preferred fluffiness and steaminess of the result. The less the fluffy but moisty.)
  • 2 liters of coconut milk (to be mixed with the sugar after it being boiled.)
  • ¼ to ½ kilo of sugar. (depending on your preferred color, sweetness and granular or purity. Brown sugar is the best I suggest)

Steps:

  1. Grate one coconut fruit and mix its meat and mix it with water again and again till you have 2 liters of it.

  1. Squeeze and strain the mixture to extract the 2-liter milk.

  1. Boil it in a pan.

  2. When the milk boils, add the sugar and taste it to your desired sweetness.

  1. Add the corn little by little while stirring the mixture in circular motion. Ensure that the corn is well mixed with the milk without cross-grained. See to it that the mixture is not too stiff and not porridge-like.

  1. put it in low heat for 5 to 1 minutes before serving. Preferably serve it on a banana leaf slicing into desired shapes.
    You can eat it together with a cup of coffee or milk. The moment is so satisfyingly amazing under the shade or on a picnic.

Significance:

Such delicacy holds a special place in my heart as it is one of the first food I have successfully cooked when I was only a 11 years old kid. I can eat it all day. Pairing it with sinugbang bulad (grilled dried fish). A treat for me which symbolizes love, family care and satisfaction. From my root, my grandparents such means preserving local simple food. As for me, I promise to continue such legendary delicacy to my sons and to their sons.

Distinction:

A distinctive feature of Daloydoy delicacy is the use of indigenous ingredients, which impart unique flavors and textures. Which in this part, the coconut (direct from our farm), pure brown sugar untreated with chemical or additional flavor enhancers or artificial preservatives and local corn grits which is mainly milled on a rock or local milling machines. Dissubjecting the final texture but sweetness, aroma, hotness, pureness and originality are prominent in flavor profile in my family’s delicacies.

Preservation:

With families and communities sharing their recipes and techniques. When mom cooked Daloydoy especially during occasions, she ensures that everyone has enough share. Moreover, these delicacies serve as a means of preserving traditions and customs during festivals and special occasions.

Overall, Daloydoy is simple yet legendary delicious one. A delicacy that no one can copy but my father’s bloodline. With our special ingredient. The Ingredient of Love and purity. Haha! Anyway, you must try preparing one soon. Next on, the legendary Biko. batanggwapo gud ta!
