Pork Shoulder with Vegetables and Mashed Potatoes: A Flavorful Feast!

This delicious dish was lunch for five people (my family) and we paired it with a dessert of cookies that I made the day before. It was an easy recipe to make and was ready in an hour and 30 minutes.

Ingredients:

  • 475 grams of pork shoulder
  • 1 tomato
  • Ketchup to taste
  • Gaucho sauce to taste
  • Garlic powder to taste
  • Salt to taste
  • Olive oilv
  • sauce to taste
  • 1/4 onion
  • 1/4 red bell pepper
  • 1/2 green bell pepper
  • 3 carrots
  • 3 garlic cloves
  • 2 green onions
  • 1 bag of mashed potatoes
  • 400 ml of water
  • 400 ml of milk
  • 1 tablespoon of margarine
  • 1 lemon tea bag
  • 1 peach tea bag

Preparations:

  1. Season the pork shoulder: To begin, take the 475 grams of pork shoulder and season it with gaucho sauce, ketchup, salt, and garlic powder. Let it rest for a while to absorb all those delicious flavors. This pork is going to shine on the plate. The key here is to ensure that the seasonings are well absorbed by the meat so that every bite is full of flavor.


  2. Prepare the vegetables: While the pork shoulder is marinating, wash, peel, and cut all the vegetables. In a large pan, heat a drizzle of olive oil and add the onion, red bell pepper, green bell pepper, carrots, garlic cloves, and green onions. Let the festival of colors and aromas begin! Cooking the vegetables separately allows each one to retain its texture and distinctive flavor.


  3. Add sauce: Add soy sauce to taste and cook over medium-low heat, covered, so that all the flavors blend and the vegetables cook gently. The kitchen smells delicious, doesn’t it? The soy sauce will add an umami touch that enhances the flavor of the vegetables.


  4. Prepare the mashed potatoes: In a large pot, pour the 400 ml of water and the 400 ml of milk. Heat over medium-low heat and add a tablespoon of margarine. Wait for the margarine to completely melt and then add the entire bag of mashed potatoes. Whisk with a balloon whisk until smooth and creamy. Add salt and garlic powder to taste. These mashed potatoes are like a warm hug on a cold day. The mixture of milk and water along with the margarine will give the mashed potatoes an irresistible texture and flavor.

  5. Prepare the juice: To accompany this feast, let’s make a refreshing drink. In a large pitcher, place the lemon and peach tea bags. Fill the pitcher with enough water and let it steep for a few minutes so the tea bags can work their magic. Done! A refreshing drink that will complete this meal experience. This juice is perfect for cleansing the palate between bites and highlighting the flavors of the main dish.

Plating:

With all the accompaniments prepared, it’s time to plate the dish. Serve a generous portion of mashed potatoes as the base. On top, place the marinated and cooked pork shoulder. On the side, add the sautéed vegetables.

That looks very well seasoned!! Nice color at the end and pretty quick preparation. Looks like a dish to easily make when are that many people, cooking for 5 each time seems a bit stressful 😩

Totally!! Cooking for so many people can be a bit complicated because of the portions.
