So I recently got laid off due to the apocalypse, and so I've been cooking. Most of the recipes I've made cost between $3.50-5.00 (the price of a beer), assuming your kitchen isn't barren, and they're something anyone can cook.
No backstories, straight the stuff I'm eatin', since I'm stuck in the house with nothing to do.
Chef Ryan's Staff Meal Pasta Carbonara
.5 kilo- egg noodle fettucini
1/2 cup- peas
1/3 cup- heavy cream
7-slices of pancetta, or 3 links of chorizo
Salt and pepper to taste
5-Eggs
1.5 cup- Parmiggiano reggiano shredded
2 tbs- Butter
- Brunoise pancetta, or charizo, about 3mm in size.
- Bring 2.2ltr of water to a boil.
- Cook protein stirring occasionally every 45 seconds to 1.5 minutes. Watch.
- After protein has achieved a temp of 165 Fahrenheit, or until it's cooked through, throw in half cup of peas to cook for 30 seconds.
- Deglaze with 1/3 cup of heavy cream.
- Put on low until reduced by %10-15 percent
- Add 2tbs of butter and stir vigourously.
- When boiling is achieved, turn off the sauté pan with the sauce and salt the water to taste.
- Boil pasta for 6-10 minutes depending on the noodle until there is about half the firmness left when you bite. Beat the eggs with shredded parmigiano reggiano while the pasta is boiling. Strain the pasta.
- Throw the eggs in the pasta immediately after it is returned to the pot.
- Toss pasta, and then coat in pan sauce.
- Toss gently for 35-40 seconds until together.
- Salt and pepper the dish to taste, and serve!

Sorry if this isn't the right kind of thing, still getting the hang of this. :)
Be safe, guys!

I've been a chef for 6 years, this was my own recipe I have used for staff meal for my fellow cooks for years, and I've never seen it anywhere else. It was my first attempt at a post so I do see what you're saying and I appreciate the feedback, I was just worried of being too wordy and such, thanks!
