How do you like to eat Kimchi the most? Do you like to eat as fresh one? or do you like to eat as stir-fried rice? Well there are so many ways Korans eat Kimchi and one of my favorite Kimchi dish is Tofu-Kimchi. It's a stir-fried Kimchi with pork belly and you eat with warm tofu.
Tofu-Kimchi
Prep time: 5mins
Cook time: 20mins
Total time: 25mins
Ingredients
• 500g Kimchi 1. For prepare the veggies, finely chop 3-4 cloves of garlics, and slice 1/2 onion, 1/2 spring onion. Cut the Kimchi into bite size. This is my favorite way to eat Tofu as well. You can put Kimchi and meat on the tofu and it will be look like tofu sushi! It's sooo good especially with some Korean Makgeolli or Soju!
• 200g Pork belly
• 1/2 onion (sliced)
• 1/2 spring onion (sliced)
• 3-4 cloves garlic (finely chopped)
• 1 Tbs Korean red pepper flakes (Optional)
• 1/2 Tbs of sugar
• 1 block firm or extra firm tofu
STEPS
2. We are going to grill the pork belly first. Sprinkle a pinch of salt and pepper on each side of meat and grill them with medium-high heat. When the pork belly turned to golden brown, cut it into bite size and set aside.(When you cut the meat you can use Scissors just like Korean bbq!)
3. Let's cook veggies and Kimchi. Don't throw the oil that we got from pork belly, we're going to use this for veggies and Kimchi. Add 1 Tbs of chopped garlic, sliced onion, and sliced green onion in the same pan. When onion gets softer add 500g sliced Kimchi, 1 Tbs of red pepper flakes, 1/2 Tsp sugar. Stir-fry them for 7 to 10 minuets in medium-high heat.
4. Boil the 1 block of firm tofu for 2-3 minuets and slice them into half inch.
5. Serve Kimchi with Tofu :)

Can it not be made with meats other than pork? As of in our religion, it is strictly prohibited by the Almighty Allah.
However, it is looked good.
Oh you can totally skip the meat!! We also make this dish without meat, it's totally normal!! :D Thank you so much!
