Sweet and Crispy Mushrooms

Hey guys! Today's recipe is going to be a vegan recipe! I made Korean Dakgangjeong(sweet and crispy chicken) with mushrooms. So I want to call it as Mushrooms-gangjeong.

There are people who're not a big fan of mushrooms, but once you fall into the taste, it seems to be addictive enough to can't get out of it!

I used dried Shitake after soaking in the water for a long time, it makes the texture a little bit chewy, and the flavor of mushrooms will be blown away while you deep frying, so when you put it in your mouth, the texture will be so similar enough to confuse whether it is mushroom or chicken.

You can eat when it's still warm, but it's more delicious if you cool down a bit, so it's probably the best side dish for your lunch box as well!

Mushrooms Gangjeong

Preparation time: 180 mins
Cooking time: 30 mins
Total time: 210 mins

Ingredients

• 50g dried shiitake
• 2 + 1/2 cups of all-purpose flour or fried chicken powder
• 1 cup of water
• 5-10 peperoncino (you can skip it if you are not a big fan of spicy food)
• 1 Tbsp minced garlic garlic
• 2 Tbsp crushed peanuts
• A pinch of salt & black pepper

Seasoning ingredients(mix together in a bowl)

• 2 Tbsp soy sauce
• 2 Tbsp starch syrup
• 1 Tbsp white vinegar
• 1 Tbsp brown sugar
• 1/2 Tbsp mustard

Instructions:

1. Soak dried shiitake mushrooms in water for at least 3 hours. Rinse the soaked mushrooms in cold water and squeeze the water out of the mushrooms.

Place shiitake mushrooms in a small bowl and add a pinch of salt, and a pinch of black pepper and mix together.

Add 2 cups of all-purpose flour or fried chicken powder, 1 cup of water in a bowl and mix well with a whisk. Prepare 1/2 cup of all-purpose flour or fried chicken powder on a flat plate beforehand.
4. After mixing the mushrooms with the dough, coat them with powder before putting them into the oil.

Add cooking oil to a small pot and increase the temperature to 160℃. Deep fry the mushrooms for 5 minutes.

6. Let the mushrooms cool once, then fry them for another 2 minutes at 180℃. Frying them twice makes the mushrooms become crisper!

Add 1 Tbsp of minced garlic and pepperoncino fry them over low heat. Add seasoning ingredients and bring it to a boil.

When seasoning starts to boils, add fried mushrooms and coat them with the sauce.

Move it to a plate, sprinkle crushed peanuts on top of it, and serve.
