Rice and Stew is another all time favorite food eaten in Nigeria. It's very easy to prepare and nourishing too, almost the answer to everything.
You don't know what to eat? Rice and Stew.
You're hungry? Rice and Stew.
The kid's lunch box? Rice and Stew.
Most eaten meal in boarding school? Rice and Stew.
Sunday lunch? Rice and Stew.
Christmas, new year, Easter meal? That's right, rice and stew.
You'd think rice and stew is abused with the way it's always eaten but no one's complaining really, we still eat it joyfully because it's not famous for nothing. I had this meal a while ago and thought to share a quick recipe. So here we go!
Ingredients
- Rice (3 cups)
- Vegetable oil
- Onion
- Tomatoes (7 large)
- Bell pepper (8 medium)
- Salt
- Bullion cubes
- Beef
Procedure
Wash and parboil the rice for 15 minutes to get rid of dirt and excess starch.
Chop the onion.
Add a teaspoon salt, a little chopped onion and vegetable oil to the rice and cook for another 20 minutes or until soft. The vegetable oil and onion is the extra pizzaz in making plain rice, it's sweeter and makes kids enjoy it more.
For the stew, it's the same recipe I used in my jollof rice recipe here. You basically just heat up the vegetable oil, add chopped onion and every other ingredient.
Rice and Stew is ready!
