Egusi soup also known as melon soup is a very popular soup in Nigeria. This species of melon is found in the tropical regions of West Africa. The seeds of the melon are what we know as Egusi. I bet you could try to use other species of melon seeds for this recipe. The seeds are rich in fat and protein and are ground into powdered form for cooking. As always with Nigerian food, there are different ways to cook egusi soup. Today I'll be showing you how I made mine using the oil fry method.
RECIPE
Ingredients
- Melon seeds (1 cup)
- Palm oil
- Blended pepper
- Crayfish
- Dry fish
- Goat meat
- Onion
- Pumpkin leaves/vegetables
- Salt
- Seasoning
PROCEDURE
- First, pour some palm oil into a dry pot and set on the stove. When it's heated, add your chopped onion. Let the onion simmer a bit and then add your pepper blend
- Allow to cook to get rid of the raw taste of the pepper. Next, add your egusi powder mix
- Add crayfish, dry fish and goat meat
Again, allow to cook for about 20 mins, add salt and seasoning cubes
Finally, add your chopped pumpkin leaves or any veggie leafy thing available
The popular Nigerian egusi is ready. You can eat with this cassava flour called eba like I did.
