Last night, I had the most incredible food preparation experience in Accra, Ghana. One of my all-time favourites is banku with grilled tilapia. If you haven't tried it, you are truly losing out. Banku is a classic meal created from maize dough that is combined and cooked to produce a smooth, doughy texture. It's served in little, circular balls that are excellent bite-sized. Banku's beauty rests in its simplicity, but it is extremely pleasant and fulfilling.

What distinguishes Banku is its ability to match so well with various sauces and grilled meats. My favourite is the grilled tilapia. The tilapia is well seasoned and grilled till crispy on the exterior but still supple and juicy on the inside. The smoke from the grill, mixed with the deep flavour of the fish, creates a delicious meal. The perfect marriage of textures and flavours is what makes Banku and tilapia so tempting!

The affection Ghanaians feel for this dish is apparent. People around are eating Banku and tilapia. It may be found on almost every street, from local cafes to street sellers, and it is served fresh and hot. The scent of grilled tilapia enters the air in the morning, afternoon, and evening, attracting both residents and visitors to enjoy this soothing cuisine. The grins of those who make it and those who eat it reflect the pride that comes with offering such a traditional dish.

What distinguishes Banku and tilapia is how well they compliment one other. The softness of the Banku, which has a subtle tang from fermentation, complements the savoury, slightly smokey flavour of the grilled tilapia. Each piece is an explosion of flavour, and the textures combine to create a filling dinner that you can't stop eating. It's one of those dinners that makes you feel at ease and nourished, regardless of where you're from.

During my time in Ghana, I had the opportunity to try a broad range of indigenous cuisine, and each one was delicious. But it was the simple but excellent combination of Banku and tilapia that really stuck out to me. The variety of the indigenous food, from spice mixes to fresh vegetables, made each meal memorable, and Banku with tilapia rapidly became my favourite.

If you ever find yourself in Ghana, do not leave without sampling this famous delicacy. It's more than just food; it's a real flavour of Ghanaian culture, and one mouthful will show you why it's so popular here. Trust me, it's an unforgettable experience!

When I was a child, raising fresh water Tilapia, fresh water catfish and prawns is one of our family business.

Grilled tilapia is one of my favorite, just add salt and it's good to go.

I came back from the market - this is how they cook it in Thailand: they stuff it with various greens, and the fish is covered with a crust of salt on top. 👍

Never been to Ghana but I have heard a lot about banku.
