FOODlog #1235: Mutton Ribs Bicol Express

Staff Meal tonight is a 🇵🇭 Filipino dish called - 'Bicol Express'.

First ate this dish when I was working at a cafe and the other chef there was a Filipino. He made some amazing Filipino dishes back then and this is one of those dishes I took away from my time there.

Its normally cooked with pork belly and I've tried to make it several different ways, once with chicken and now with mutton ribs!

The chicken one didn't do the dish justice but this mutton ribs is amazing!

Its a simple dish that starts with sauteeing ginger, onions and garlic together with Belacan (dried shrimp paste).

After it gets fragrant, I add the mutton Ribs and everything into a pressure cooker to speed up the cooking process since the ribs do take quite a bit of time. 45 minutes in the pressure cooker and then add in coconut milk and red and green chilies, season to taste with salt, and the dish is done!

We served it with white rice which is the perfect accompaniment to enjoy this dish.
