FOODlog #1246: Pistachio Yogurt Bar

R&D-ing a new dessert for the shop. Need some tweaking in the flavor and execution of the chocolate coating, but all on track for a nice palate cleanser dessert.

  • Pistachio Honey & Lavender Yogurt Bar
  • Matcha White Matcha
  • Maldon Flaky Sea Salt

For the yogurt bar, I simply combine Greek yogurt, pistachios, honey, and lavender syrup then blitz them all together with a hand blender. Once it's nice and combined, transfer it into a silicon mold. Mine is in a rectangular shape, but you could go creative and use any shape of mold you'd like.

Next it goes in the freezer overnight to set and solidify.

The next day, I prep the melted chocolate that will coat the yogurt bar. I combine white chocolate pebbles and matcha powder with some olive oil then let it melt in a bowl over boiling water.

Once it melts, let it cool for a bit before coating the yogurt bars and then letting it set again in the freezer for another 10 minutes or until you want it to be served.
