FOODlog #1271: Mutton Masala & Bhindi Masala

Made masala Lamb Curry and bhindi masala yesterday. Also paired it with some fragrant kabsah rice cooked by my sous chef, making it a complete meal that was ultra delicious!

I marinated the lamb shoulders for 2 days with yogurt, cumin, Fennel, and coriander powder, garam masala, turmeric powder, and chili powder. Seasoned it with salt and pepper and vacuum bagged it to cook on Sunday.

Pressure cooked with shallots, ginger garlic paste, and tomato puree, and the dish is done!

I wanted to make rogan josh but added one too many spices that made it turn out like Malaysian-style curry 😄

For the bhindi masala I simply cut it up into bite size pieces then cooked it with tomato puree, onions, turmeric powder, and garam masala. If you have amchoor powder, which is a dried mango powder, you can add that as well which makes it that much more delicious.

We had everything with rice and what a delicious meal it was!
