FOODlog #1277: Taiwanese Beef Noodle Soup

One of my wife's favorite food are noodles. Whether it's dry noodles or soup versions, she loves them. And after we got married, I think noodles have become one of my favorite dishes too. I don't only love eating them but also making them.

It's so satisfying to prepare every element and putting it all together then seeing the final product of all your efforts turning into a bowl of delicious food.

Made this 🇹🇼🥢 Taiwanese Beef Noodles Soup for our staff supper on Friday. It was such a flavor bowl of noodles; super satisfying and delicious!

For the beef broth, I used beef shin to make it, along with doubanjiang (spicy fermented bean paste), tomato paste, soy sauce, dried chilies, preserved mustard greens, onions, white radish and carrots. I flavored the broth with a spice bag that I made with coriander seeds, cumin seeds, Fennel seeds, star anise, a cinnamon stick, black peppercorns, and some bay leaves.

Everything goes into a my Ninja 8-in-1 Multicooker and pressure cooked for 35 minutes and the broth is done!

Serve it up with some noodles and simply blanched bok choy, and enjoy!
