FOODlog #1279: Beef Ribs with Pommes Puree

Super delicious meal of beef ribs with pommes puree and mix vegetables.

The ribs were marinated overnight then pressure cooked and finished off in the oven with a dry rub. Super flavorful and delicious especially when paired with the super creamy and fine pommes puree.

My sous made the ribs and I made the pommes puree. What's pommes puree you ask? Well it's basically mash potatoes pass through a sieve and mixed with lots of butter and milk. It's extremely silky and velvety with just the most amazing mouthfeel.

For the vegetables, I stir fried and braised red bell peppers, leaks, onions, carrots, broccoli, and cauliflower with oyster sauce and chicken stock. Thickened the sauce with a Cornstarch slurry and wahla, gravy!

Finished off the meal with a glass of strawberry combucha made by our bartenders. Sparkling from its natural fermentation process, that's just the perfect thirst quencher at the end of a delicious meal!
