Chicken masala keema with beetroot and potatoes, salmon and tiger prawn eggs. That was our staff meal that I prepared on a busy Friday night. A 40+ reservation night so something quick to put together for our staff meal was the way to go.
I simply started with some onions, and a garlic and ginger paste. Sautéed in oil until fragrant then I added in beetroot that have been diced and water then boil until they soften.
Once they soften I then added in garam masala and the mince chicken to cook until they were done.
I served the keema along with another dish of prawns and eggs simply cooked in butter and seasoned with salt and pepper.
Quick and easy meal to prepare and since I'm cutting down on carbs, this was a perfect meal to fill the tummy before a busy night.
