FOODlog #1303: Ayam Geprek

Dinner last night was simply amazing! My sous made Ayam Geprek 🌶️, which is fried chicken with aromatics like lemongrass, turmeric, ginger, shallots, and garlic, then seasoned with salt and pepper overnight in the fridge.

Its then deep fried and oven-roasted to finish baking it crispy on the outside and juicy on the inside. It was super flavorful from all the marinate fully seeping into the chicken.

We had it with rice, fried tempeh, fried tofu, cabbage, and the most important thing that makes it Ayam Geprek - the spicy chili sambal.

Man that chili sambal was so addictive! It's cooked with blended red chilies, tomato, shallots, and lots of oil. Seasoned with salt to taste and you've got one of the most addictive chilies that makes this meal ultra delicious! 🤤
