Hello everyone, its time to read my journal. First, how are you today? May you always be given happiness and blessings wherever you are.
Since last March 12, we as Muslims have started carrying out worship which is carried out every month for 1 year, in the month of Ramadhan, namely fasting Ramadhan.
This year, as usual in the month of Ramadhan, with all wisdom, I have goals for the month of Ramadhan, one of which is to develop skills for making appetizers such as desserts. Especially the typical Indonesian desserts are very diverse.
So, this started from my mind which was very overthinking when I was hungry, I was browsing on social media and found inspiration. This is what made me make this food. Besides that, I have some extra banana leaves. It seems like the universe allowed me to do it.
Jongkong, you heard that right, not Jungkook. Please don't say it wrong. This food comes from Bangka, Riau Islands, one of the most beautiful areas on the island of Sumatra. Jongkong is a food made from rice flour with tapioca wrapped in leaves. The taste is very distinctive, fragrant, sweet and slightly savory.
This dessert is only sold during the month of Ramadan, a type of seasonal food in this city. I often find it in several street food stalls, we call it 'Takjil'. So there were several 'impromptu' food stalls at the crossroads and they were very busy. There are lots of people selling food such as fried foods, pudding, noodles and traditional desserts.
If you see a stall filled with banana leaf wrapping, that's Jongkong. It is very distinctive and the price is relatively expensive compared to other foods when compared with any other type of dessert.
So, Jongkong is very limited, limited because there is a lot of interest but few people sell it. That will make you 'war' with many people. You can only get it if you buy it very quickly, around 2-3 pm. I'm quite lazy to leave the house in summer like this. So, I just made it. With minimal ingredients and also using recipe information in several posts.
There are several ingredients needed:
- Banana leaves with a wide surface
- 125 gr rice flour
- 75 gr tapioca flour
- 2-3 tbsp sugar
- 800 ml coconut milk (medium viscosity)
- 400 ml coconut milk (medium viscosity)
- 60 gr palm sugar
- Young coconut meat
- Pandan leaves
- Salt
How to make jongkong:
- You have to make pandan water mixed with pandan water first. So, after I squeezed the grated coconut, with the water blended together, I got 1200 ml of coconut milk which will be divided into 800 ml and 400 ml. 800 ml of coconut milk is added with pandan then blended again to get the aroma of pandan and the green color.
- Rice flour and tapioca flour that have been weighed are then mixed with sugar and pandan coconut milk which is stirred and then dissolved, before being heated over a wokpan. Turn on the stove heat and cook until thick and solid. Set aside then until it cools slightly.
- Mix 400 ml of coconut milk with palm sugar and then heat until boiling. Set aside until it cools slightly.
- Take a banana leaf covered with another banana leaf (2 layers of banana leaves), then pour 1 tablespoon of jongkong mixture, 1 tablespoon of palm sauce and some coconut meat. Wrapped and steamed for 15 minutes.
- Jongkong is ready to be served!
