Hello there, i hope you are doing fine right now, if not, dont stress too much, better days are coming. This is my first time posting here in #plantpower vegan and i hope i am welcome here. I have learnt alot of delicious meals from this community, but today i want to show you all a very simple but delicious way of making vegetable rice .
Ingredients;
4milk cup of rice
2½ sticks of Carrot
Half of a whole Cabbage
1 Green pepper
4 Bell pepper
2 Tomatoes
10 strands of Spring onion
2 onions
1 table spoon scoop of Sweet corn
1 table spoon scoop ofGreen peas
1 table spoon Soy sauce
20mls of Soya oil
1 tablespoon Salt
2 cube of Seasoning
This is for two kids, my husband and i. Thats 4 servings in total.
Procedure;
Firstly, you wash your rice very well to get rid of the starch and dirts, then you bring to boil till its soft. While boiling you can add your green peas if its the hard one you have, but if you have the soft one in a tin, please dont add. You can fry that with other veggies. You dont want to cook your rice too soft at this stage, so it doesn't stick together when mixing your veggies. So you bring to boil till its reasonably soft. Then you pour it into a sieve to drain out the water completely.
Put a Little amount of oil in a pot on a low heat then pour your chopped veggies, from the hardest to the softest. Fry for about 3 minutes.
Add a little soy sauce. Soy sauce gives your food flavour and it also has health benefits. its rich in antioxidant and also helps digestion.
Pour your cooked rice. But make sure the water in the rice is completely drained.
Add salt and seasoning, mix thoroughly and allow to steam for another 3 minutes.

My cabbage was stir fried with a little soy sauce. To be served with the vegetable rice.
