Today I am very happy to bring you this recipe, since I was a child I have been a lover of muffins, although here in my country it is commonly called, Ponquesitos! 😋

This kind of recipe can be made in many flavors, I remember that my favorite was always one in particular that they sell even in supermarkets, almost always comes in Vanilla, ummmmm that was for me the madness of delicious, but now that I've grown up I can make them myself and the flavor that I want.

So today I bring you some Muffins a little healthier than the ones I used to eat as a child, and also totally vegan! I'm sure that kids and grown-ups will love this recipe.

I invite you to prepare together these delicious muffins.

Ingredients:

  • 200 Ml of Almond Milk or any other vegetable Milk.
  • 60 Ml of Extra Virgin Olive Oil of mild flavor, you can use another vegetable oil that you have at your fingertips.
  • 3 tablespoons of Lemon Juice.
  • 1 teaspoon of lemon zest.
  • 1 teaspoon of vanilla.
  • 100 grams of all-purpose wheat flour.
  • 35 grams of Almond Flour or Oat Flour.
  • 90 grams of brown sugar or grated panela sugar.
  • 1/2 teaspoon of salt.
  • 2 teaspoons of baking powder.
  • Mini Chocolate and Peanut Bonbons, to taste and optional.

How to prepare:

The first thing we will do is to preheat our oven.

Now in a bowl we are going to pour the vegetable milk and oil.

Add the lemon juice, the vanilla and the teaspoon of lemon zest.

Then mix very well, making sure everything is well integrated, set aside for a few minutes.

Now in another bowl we are going to add the dry ingredients, add the flour together with the baking powder, sift it.

We also integrate the sugar, the almond flour and the salt.

We mix so that everything is well integrated.

Now we are going to add these dry ingredients to the wet mixture that we have reserved, mix until we get a homogeneous mixture.

Once the mixture is ready, pour it into the muffin pans, I poured two tablespoons of mixture into each muffin pan, then I placed the mini Chocolate Peanut Chocolate Bonbon and then I put two more tablespoons of mixture on top, so that the Mini Bonbon is covered.

Put in the oven for approximately 20 to 25 minutes, remember that the cooking time will depend on each oven, when it starts to smell good is good to check to see if they are ready, never forget to do the toothpick test, if it comes out dry, it is because our Muffins are ready.

Let them cool a little and enjoy them! Personally I love to accompany them with coffee, but you know, you can accompany them with whatever you like.

Hoy me encuentro muy contenta de traerles esta receta, desde niña he sido amante de los muffins, aunque aquí en mi país se le llama comúnmente, ¡Ponquesitos! 😋

Esta clase de receta la podemos hacer de muchos sabores, recuerdo que mi preferido siempre fue uno en particular que venden aun en los supermercados, casi siempre viene de Vainilla, ummmmm eso era para mí la locura de delicioso, pero ahora que he crecido los puedo hacer yo misma y del sabor que más me apetezca.

¡Por eso hoy les traigo unos Muffins un poco más saludables que los que solía comer cuando niña, y además totalmente veganos! estoy segura que a grandes y Chicos les encantará esta receta.

Vamos te invito a que juntos preparemos estos deliciosos Muffins.

Ingredientes:

  • 200 Ml de Leche de Almendras o cualquier otra Leche vegetal.
  • 60 Ml de Aceite de Oliva Extra Virgen de sabor suave, puedes usar otro aceite vegetal que tengas a tu alcance.
  • 3 Cucharadas de Zumo de Limón.
  • 1 Cucharadita de ralladura de Limón.
  • 1 Cucharadita de Vainilla.
  • 100 Gramos de Harina de Trigo Todo Uso.
  • 35 Gramos de Harina de Almendras o Harina de Avena.
  • 90 Gramos de Azúcar Moreno o Panela rallada.
  • 1/2 Cucharadita de Sal.
  • 2 Cucharaditas de Polvo para hornear.
  • Mini Bombones de Chocolate y Maní, al gusto y opcional.

Modo de preparación:

Lo primero que haremos es poner a precalentar nuestro horno.

Ahora en un recipiente vamos a echar la Leche vegetal y el Aceite.

Agregamos también, el Zumo del Limón, la Vainilla y la cucharadita de ralladura de Limón.

Luego mezclamos muy bien, asegurándonos que todo quede bien integrado, esto lo reservamos por unos minutos.

Ahora en otro recipiente vamos a echar los ingredientes secos, echamos la Harina junto con el Polvo para hornear, esto lo tamizamos.

Integramos también el Azúcar, la Harina de Almendras y la sal.

Mezclamos que todo nos quede bien integrado.

Ahora estos ingredientes secos lo vamos a echar en la mezcla húmeda que tenemos reservada, mezclamos hasta conseguir una mezcla homogénea.

Una vez lista la mezcla, vertemos esta en los moldes para muffins, a cada molde yo le vertí dos cucharadas de mezcla, luego le coloqué el mini Bombón de Maní y Chocolate y después le puse por encima dos cucharadas más de mezcla, de modo que el Mini Bombón quede tapado.

Metemos al horno por aproximadamente 20 a 25 minutos, recuerda que el tiempo de cocción dependerá de cada horno, cuando empiece a oler rico es bueno verificar a ver si ya están listos, nunca se te olvide hacer la prueba del palillo, si este al meterlo sale seco, es porque nuestros Muffins ya están listos.

I still remember my favorite cupcakes; they used to sell them at a bakery near my granny's. I was really proud the first time I got to make them myself. Yours are healthier than regular cupcakes, and they look moist and soft 😋❤️

I used to love the ones sold in the supermarket, but now that you know how to make them, it's always better to make them at home.
And yes, these are very soft and the lemon flavor is very noticeable!
