I could live on these. The "red spread" I never tried but it has me salivating. Even more so is the smokey eggplant. Eggplant on the fire is when it's at it's absolute finest. When the weather smartens up around here I'm going to the park with a bbq and grilling 10 of them to put aside. There is nothing better then an eggplant dip.

I love that you can make coconut milk. The taste would be extraordinary, unlike the cans we get here. The spreads in the avocado are very impressive and a genius idea. Thanks for the inspiration. Now I need some groceries. Your food makes me so hungry.

I hope you get to grill lots of eggplants in the park while enjoying a sunny day; I know you've been longing for a change of weather for a few weeks now. I really enjoy the smoky flavor, especially in eggplants because they remind me of my mother.

And I'm so glad you like the idea of the spreads in the avocados; for me it was a very practical discovery, as you only need a spoon to eat 😁 No dishes to do.
