Just like i wrote on my last vegan food, i talked about my ill health and, have decided to consume only vegan foods until i fully recovered. Last weekend, while contemplating on what to eat, i decided to eat rice. But with what? That's the question that comes to my mind. While strolling down to the market, i saw a coconut seller and immediately, i decided to go for coconut rice since i have consumed lots of vegetables. From her, i bought two good sizable coconut and went back home to cook my rice. Check out the picture's and the preparations together with the cooking procedure's.
Ingredients-
4 cups of local Nigerian rice
2 sizable coconut
Chilly pepper 2
Salt
Water
Onions 2 ball's
Step's-
First was to break the coconut's with cutlass. I drank the water inside the coconut though it wasn't that juicy. Then, i break the coconut into smaller pieces so that i will be able to remove them from the hard shell's using knife 🔪. Already cut them just as you can see from the first image. So, i used kitchen knife to remove the coconut from the shell. Done removing it, i washed them properly. Probably twice.
Next was the grinding of the coconut's with manual grinder. It took me more than 20 minutes to grind all. Done grinding, i squeezed out the first milky juice in a clean plait. Then, added a boiled look warmer water to it to enable me squeeze out all the milk's juice.
After that,.i poured the juicy water inside my pot using seive to make sure the chaff didn't enter the pot.

Cooking-
First was to remove sands from the rice. Parboiled and washed very well to make sure no sand is left. After washing, i put the pot containing the coconut milk on top of the firy gas cylinder. Add the chilly pepper, onion and salt before adding the rice to it.
But before adding the onion, i washed and chopped them as well.
After putting everything, i covered the pot and allowed to boil for 5 minutes. I opened to check if the salt is enough. I added more salt to my desired taste, added more water and conver for another five minutes.
This time, the food is done with natural coconut taste. It taste great. Delicious and healthy. I enjoyed eating it.
The coconut despite having a lot of health benefits, gives my food natural sweetness 😜 which i enjoyed so much. The flavor or the aroma is makes me to want more even after getting satisfied. Do you know that coconut is filled with fiber and fats? Boost immune system, an anti aging. No wonder yhe coconut oil is very good to the skin. Very good for diabetic patients because it supplies them with natural sugar tastes. I really enjoyed my coconut recipe 🤤.
