Crema de Verduras Rostizadas

Hola amigos feliz noche espero que todos estén súper bien , antes les he comentado que yo sufro de fuertes problemas de gastritis y por eso llevo una dieta muy saludable pero estos días fueron llenos de estrés y no pude evitar sentirme mal y por eso he tenido que comer muy suave y cosas que me caigan muy ligeras en el estómago, los mejores vegetales para mí son el calabacín la auyama y sin duda el mejor es la zanahoria por lo tanto quise hacerme una crema con estos vegetales pero quería darle más sabor y consistencia así que lleve a rostizar al horno mis verduras y sin duda el sabor fue increíble, les dejo la receta y el paso a paso de mi rica crema de verduras rostizadas .

Roasted Vegetable Cream

Hello friends, happy evening, I hope everyone is super well. Before I told you that I suffer from severe gastritis problems and that is why I have a very healthy diet, but these days were full of stress and I could not help but feel bad and that is why I had to eat very soft and things that fall very lightly on my stomach, the best vegetables for me are zucchini, auyama and without a doubt the best is carrots, so I wanted to make a cream with these vegetables but I wanted to give it more flavor and consistency like this I took my vegetables to roast in the oven and without a doubt the flavor was incredible, I leave you the recipe and the step by step of my rich cream of roasted vegetables.

Ingredientes
• 230 gr de auyama
• Una zanahoria ( 85gr)
• Un calabacín ( 110gr)
Para el caldo de vegetales
• Una cebolla pequeña ( 65gr)
• Dos dientes de ajo
• 25gr de cebollín ( la parte verde )
• Una ramita de cilantro fresco ( aproximadamente 15gr)
• Dos tazas de agua
• Una cucharadita pequeña de sal

Ingredients
• 230 gr of pumpkin
• One carrot (85gr)
• A zucchini (110gr)
For the vegetable broth
• A small onion (65gr)
• Two cloves of garlic
• 25gr of chives (the green part)
• A sprig of fresh coriander (approximately 15gr)
• Two cups of water
• A small teaspoon of salt

Lo primero que hice fue lavar muy bien mis verduras con abundante agua y raspar un poco la piel de la zanahoria y el calabacín con ayuda de un cuchillo , también le retire la piel a la auyama con mi problema de gastritis no puedo consumir la piel de los vegetales ya que me cuesta luego poder digerirlos .

The first thing I did was wash my vegetables very well with plenty of water and scrape the skin of the carrot and zucchini a little with the help of a knife. I also removed the skin of the auyama with my gastritis problem. I cannot eat the skin of the pumpkin. vegetables since it is difficult for me to digest them later.

Cortamos en rodajas la auyama , la zanahoria y el calabacín, colocamos en una bandeja para horno disponiendo la auyama y la zanahoria en la base y el calabacín arriba para que no se nos vaya a quemar, lo llevamos al horno por 30 min , luego lo retiramos y dejamos enfriar un poco .

Cut the auyama, the carrot and the zucchini into slices, place them on a baking sheet, arranging the auyama and the carrot on the base and the zucchini on top so that they do not burn, we take it to the oven for 30 min, then Remove and let cool a bit.

Tenemos nuestras verduras rostizadas ahora vamos a preparar el caldo aromático para procesar la crema , vamos a cortar una cebolla en rodajas y dos dientes de ajo triturados , cortamos también la parte verde del cebollín.

We have our roasted vegetables now we are going to prepare the aromatic broth to process the cream, we are going to cut an onion into slices and two crushed garlic cloves, we also cut the green part of the chives.

En una olla agregamos el ajo , la cebolla y el cebollín y dejamos sudar por unos 2 min , luego añadimos dos tazas de agua y sazonamos con una cucharadita pequeña de sal , dejamos cocinar y reducir a la mitad por unos 35 min y vamos a obtener una taza de caldo aromático.

In a pot we add the garlic, the onion and the chives and let them sweat for about 2 min, then we add two cups of water and season with a small teaspoon of salt, let cook and reduce by half for about 35 min and we are going to obtain a cup of aromatic broth.

En una licuadora añadimos las verduras que rostizamos en el horno y añadimos una ramita de cilantro, luego añadimos una taza de caldo aromático de cebolla y ajo y procesamos hasta que nos quede una crema .

In a blender we add the vegetables that we roasted in the oven and add a sprig of cilantro, then we add a cup of aromatic onion and garlic broth and process until we have a cream.

Servimos y disfrutamos, quedó super rico con un sabor muy interesante que le da llevar las verduras al horno y no simplemente hervirlas , no solamente conservan su hermoso color si no también gran parte de sus nutrientes.

We served and enjoyed, it was super tasty with a very interesting flavor that brings the vegetables to the oven and not just boil them, they not only retain their beautiful color but also a large part of their nutrients.
