vegan salad with moringa leaves and blended groundnut cake

Hello lovers of @plantpowervegan community, welcome you all to my blog. It is with so much joy am sharing with us all a delightful recipe on how to prepare a delicious and healthy vegan salad.

Today also happens to be my first time publishing in this community and I hope to continue posting amazing recipes here. Now onto our salad, it is a combination of moringa leaves and vegetables along side with blended groundnut cake. Here the highlight of this salad is the blended groundnut cake which give your salad a flavourful taste of peanut.

This particular recipe was introduced to me by my friend and considering the health benefits packed in it from the moringa leaves which helps in differs way such as providing the body with blood sugar regulation, and helps to protect cell from damages. Also it is used for asthma and diabetes. The groundnut cake is loaded with essential minerals and vitamins important for maintaining a healthy immune system and supporting other bodily functions. This recipe has become one of my favorite salad and am so loving it. 😊

To begin with the procedures, these were the ingredients I used:

*Moringa leaves
*Groundnut cake (87g)
*Tomatoes, onion and peppers (depend on the quantity you like)
*Seasoning (one Maggi cube and a pinch of salt)
*Water (for washing and cooking moringa leaves).

PROCEDURES

In a bowl, I poured in desired amount of water into the moringa leaves of which I used it to wash the leaves properly to remove dirt. I washed three times to be sure it's cleaned after which I put it in a clean pot, poured in the leaves and added a cup of water to allow it cook properly for 20mins.


When the moringa was on heat, I went ahead to prep other ingredients such as slicing my tomatoes, onions and also blend my peppers after which I put everything in same bowl.

When the leaves were properly cooked, I drained the water with a perforated basket and put it in a bigger bowl which I went ahead to add in my veggies, followed by blended groundnut cakes, seasoning and properly gave it a good stirred and then our salad is ready for consumption.
