Hello everyone, Welcome once again to my blog.
Today, I made a simple recipe for lunch to enjoy with my siblings and felt it would be great to share with the Vegan and Hive community as a whole.
The recipe is similar to plantain hush but with a little twist since I included a small quantity of yam. I have enjoyed this recipe several times and never regretted giving it a try back then. It is a quick, tasty meal, very economical and nutritious as well.
Get to know the ingredients.
750g of plantain
300g of yam
3 pieces of carrot
1 piece of bell pepper
3 sticks of spring onions.
½ teaspoon of salt
400 ml of groundnut oil
1 piece of ginger
10g of chili powder
30g of kidney beans
Procedure.
The procedure is quite easy, and you definitely do not need to be a pro before trying it out. The best of it is that it doesn't take time to make this magic.
I started by rinsing the back of the plantains.
I removed the back of the plantain and cut them into smaller sizes.
I peeled the back of the yam as well and cut them into smaller sizes.
I moved on to frying the plantain and yam. I heated the groundnut oil in the frying pan.
I fried the plantain first, and the yam came next.

While frying, I went on to process the other ingredients.
I cut the carrots into smaller bits.
I chopped the spring onion.
I chopped the ginger.
I chopped the bell pepper.
By the time I was done frying, I had finished processing the remaining ingredients.
I removed the groundnut oil from the frying pan and poured just a little that would be enough to fry the remaining ingredients.
I heated the little oil and turned the carrot in the pan.
I added the kidney beans and stirred the contents in the pan.
I diluted the chili powder in 40 ml of water and turned it in the pan.
Ginger and bell pepper joined the party.
I added ½ teaspoon of salt and stirred the ingredients. I allowed them to fry for three minutes under low heat.
I turned the fried yam and plantain in the pan. I stirred the ingredients and made sure they mixed properly with the yam and plantain.
The spring onion came in last, and I mixed all the ingredients together again.
I allowed the ingredients to fry again while stirring for another three minutes under low heat, and my lunch is ready.
I served my lunch and really enjoyed the meal. Let me know what you think about the recipe in the comment section.
