Greetings, friends and fellow vegan lovers! While our construction work is ongoing, I’ve been quite busy. However, I still take the time to cook for the workers. Today, it’s the carpenters' turn, and I made a simple vegan cake using ingredients I had at home.
I used overripe bananas, I almost put them in the compost. But after peeling them I found they are nice and soft, perfect for making cake.
The ingredients:
300 grams of banana slices
1/4 cup of coconut oil
1 cup of fresh coconut
1/2 cup of jaggery
2 tablespoons of chopped nuts (any kind available)
1/4 cup of cocoa powder
2 cups of all-purpose flour
1 teaspoon of baking powder
1/2 teaspoon of cinnamon powder
1/2 teaspoon of baking soda
1/4 teaspoon of salt
1/4 cup of semolina
1/2 lime juice
In a mixer jar, add the freshly grated coconut and grind it for 1 minute.
Next, add the chopped banana slices (approximately 300 grams). Blend the mixture for 1 minute.
Coconut oil a banana slice fell into it.
Add the coconut oil to the banana and coconut mixture.
Blend for an additional 2-3 minutes until you get a coarse paste.
Take a bowl and a strainer. Add 2 cups of flour to the strainer.
Add the cinnamon powder and salt.
Add the baking powder and baking soda.
Add the semolina.
Add the cocoa powder. Shift the mixture to ensure everything is well combined.
Chop the available nuts if you have any.
Mix 1 tablespoon of flour with the chopped nuts and set aside.
Grease a cake tray with coconut oil and preheat the oven.
Pour the banana mixture into the flour mixture.
Add the half portion of jaggery to the mixture. Mix well using a whisk or hand mixer. It is thick,
Use 1/2 cup of water to rinse the mixer jar.
Pour the rinsing water into the mixture.
Add the remaining half portion of the jaggery.
Mix the mixture well using a cut-and-fold method.
The batter is ready add 1/2 lime juice in the batter.
Mix the chopped nuts and stir them well.
Shift the batter in greased cake pan and bake it at 180 C for about 35-40 minutes.
After 40 minutes remove from oven and let it cool down.
If you want to do the baking test Use a toothpick or other pin.
Made glaze using cocoa, jaggery, water, and coconut oil.
After the cake becomes cold pour the glaze on the cake.
The soft nicely baked cake is ready.
