Hello, world of vegan lovers! Today, I put a twist on our Sunday breakfast. I usually make South Indian pancakes that are gluten-free and vegan, using split black lentils and rice, served with various side dishes like chutneys, sauces, or vegetables. Today, I served them with homemade no-sugar-added starfruit jam. but presented them in different ways, making them suitable as finger food or appetizers. This presentation is a great way to appeal to children who may not enjoy eating vegetables or prefer junk food, as it allows us to serve healthy food in a fun way.
Making this pancake is too easy
ingredients:
1 cup local rice they are slightly steamed.
2 cups any rice
1 cup split back beans urad dal.
1 tsp fenugreek seeds
3 leaves of spinach
1 tbsp grated beetroot
salt to taste
1 tsp coconut oil
1 tbsp grated fresh coconut.
1 starfruit for decoration.
washed urad dal, rice, and fenugreek seeds thoroughly and soaked them separately for around 6-7 hours.
Ground them one by one using a mixer and mixed the fine paste in a bowl covered and kept for 6-7 hours to get natural fermentation.
The next day It is ready to make pancakes after adding salt for taste.
But today I added some spinach and beetroot in the batter to make them special.
ground 1 tbsp beetroot
Juiced it using a strainer.
Mixed batter into beetroot juice.
The nice bright red/pink batter is ready.
Blended the spinach in a fine paste.
Added plan batter into spinach paste.
The nice green batter is ready to make pancakes.
Here I had bright pink and green colored batter to make my creation.
First I started with green batter making small circles on the hot skillet.
Here they were formed in small rounds as a base for flowers.
After making enough green small pancakes, which are the base of the flower. I started with Red/pink colored batter.
In the same skillet, I made these red/pink colored strips from pink batter.
or
make a normal-sized pancake and cut it into strips.
Roll the strip in a flower shape.
And prick a toothpick to hold the shape.
Set them on the green base sprinkled with fresh coconut. and served with starfruit no-sugar-added jam this recipe, I will post it as soon as possible.
