Ivy gourd, Coccinia Grandis / Tondali bhaji in Goan style

Ivy gourd, Coccinia Grandis known as scarlet gourd, Known as Tondali here, it is a tropical vine fruit and grows very easy and commonly found around our area. we had it but they were not survive. It grows primarily in tropical climates, they grow without any fertilizer so It is 100% organic. This is the one of reason we like it.

Ingredients:
200 grams of Tondali
2 tbsp split Pigeon Pea/Turdal
1 green chili
1/4 cup fresh coconut
2 sprigs of curry leaves
1/2 tsp salt
2 pinches of turmeric
1 tsp oil

Choosing the good once- when we make bhaji of it mostly chose green ones which are green inside also. If they are read color they ripe and very sour taste which is not good for cook.so I made cut in the center and checked the green ones to use make bhaji. The stem part and red ones gone in compost.

After separated good ones I cut them in small pieces. soaked Pigeon Pea/Turdal, cut green chili in small pieces.

Picked curry leaves from the garden

Heat 1 tsp oil in the pan and add curry leaves.

Stirred in cut Ivy gourd/Tondali and green chili.

stirred in soaked lentils.

Turmeric and salt in.

Mixed all together thoroughly.

Then grated fresh coconut.

Added 1/2 cup water,

Covered, and cooked on low heat for 8-10 minutes.

After the water dries out close the heat and our tasty simple and healthy tondali bhaji is ready.
We use it as a side dish with rice and using together with roti, or chapati (Indian flat breads)

I have never seen such a thing. We don't even have them imported. They look like cucumbers a little bit. The recipe is full of great ingredients, the coconut really gets me excited.

You have to come here to visit us I am not joking, you can have fresh, dried, or tender coconut as much as you will. as well you will find all most everything here even western fruits and vegetables but I don't buy western ones they are better there.
