Veg fried rice with vegetable cutlets.
Hello, community, today making Indian style lunch.
This post is for @qurator top hive-chef The lunch for kids. Last year in my cooking class i taught some parents this Indian healthy lunch and I got many good comments. Kids like this menu. It may look dry but it has good moisture from vegetables some parents add yogurt dressing, or some sauce. instead of using oil they use butter. but mine is 100% vegan version. I use oil.
It is two steps but very quick done.
Step 1 making cutlets:
Ingredients:
3 leaves of cabbage
2 spring onion
1/2 green paprika
1 small carrot
4 cilantro sprigs
1/2 onion
1/2 cup chickpea flour
1 tbsp cooking oil
1/4 tsp black pepper
1/2 tsp salt.
Finely chop all vegetables, cabbage, paprika ,carrot, spring onion, cilantro.
Add salt and pepper.
Add chick flour and mix all together.
it will bind enough to form into balls.
Make lime size balls.
these ingredients yield balls.
/flatten into cutlet shape.
heat a skillet with 1 tbsp oil and fry the cutlets on both side on medium heat.
when done they look like this.
keep aside.
The vegetable fried rice
ingredients:
15 almonds
2 small carrots
1/4 cup green peas
2 tsp oil
1 cup cooked rice
1 bay leaf.
1 clove
1 pinch of salt, 1 pinch of black pepper, pinch of garam masala
Using same pan roast the almonds using 1/2 tsp oil and keep aside.
wipe the pan and add 1 tsp oil.
After oil is warm add bay leaves and clove.
Add carrot,
Add frozen green peas.
Stir and add pinch of salt
Add rice
mix rice and carrot green peas.
Add black pepper.
And sprinkle pinch of garam masala. take off from the heat. If you wish sprinkle 1-2 tsp water on the rice and cover it.
Mix it thoroughly and the rice is ready.
If serving on the spot add roasted almonds.
or mix it during the serving.
Serve with little tomato ketchup beside. Don't forget to discard clove and bay leaves.
