Greetings from India! Our schedule here is very busy, and each day has new challenges. Sometimes, I have to keep our lunches and dinners very simple. Fortunately, we have plenty of opportunities to access a variety of vegetables and grains, especially during the winter, when different vegetables are in abundance.
We use many of these ingredients, but I often can't take photos of the cooking process. But still, I do try. Also, power cuts or internet connections are the issues. When I do find the time, I like to prepare easy, simple, and healthy dinners for us. Today, I made a spiced rice dish using various vegetables called Masala Bhat. It's typically made for large gatherings or special occasions. Though simple, but it is delicious!
Ingredients:
150-grams cauliflower
2 medium carrots
1 green paprika
20 green beans
100 grams cabbage
1 potato
1 onion
1 tomato
1 green chili
1 cup rice
1 tsp salt
1/2 tsp turmeric
2 allspice leaves
garam masala
1 tsp ginger garlic paste
2 tsp any cooking oil
cucumber, tomato, onion, and carrot for salad
soaked rice in the water about 10-15 minutes.
Cleaned and chopped all vegetables.

In the pan poured 2 tsp groundnut/peanut oil
In hot oil, I added potato slices and cauliflower florets, stirring them until they were half-cooked.
removed potato slices and cauliflower into bowl and kept aside.
In the leftover oil added allspice leaves.
Then onion slices, green beans, carrots, and green chili.
Stirred them until the onion got translucent.
Added ginger and garlic paste.
then cabbage, paprika, and 1 tomato (I added additional)slices.
Mixed them well.
Drained water from soaked rice.
And added to vegetables.
Added garam masala, salt, and turmeric
Mixed and kept stirring until all vegetables and rice started aromatic.
When they mixed well and started resealing aroma on this stage added boiling water into it.
Added water and coriander.
Masala Bhat is almost ready.
Added roasted potato and cauliflower. gave a nice mix.

And masala Bhat is ready
Used cucumber, onion, tomato, and carrot to make a salad sprinkled little coriander on, together with masala bhat.
And our dinner is ready. My simple vegan Monday
