Yes, here it is cold dark, and windy. I want to be inside the house, keep warm, eat warm, and drink warm. So, I made pear cake/pie
The organic pears came from one very good friend's garden. the cake was delicious and the first time I made it this way. It is my pleasure to share this recipe with you. In this recipe, I made a new experiment to make the vegan batter and it turned out very good.
4 fresh pears
3 tbsp sugar
1/2 lime juice
few red currants.
1 tbsp sugar for making caramel sauce.
1/4 cup of almonds peeled and sliced/chopped.
1 cup of white flour
1 tsp vanilla essence
1/3 cup sugar
1/2 cup cashew milk added 1tsp vinegar.
1/3 cup oil
1 tsp baking powder
2 pinches of salt
1/3 cup of flaxseed jelly
2 tbsp gram flour
2 pinches of baking soda.
For making this cake use the pie pan because it is good to be a flat cake when we use vegan ingredients. I used 2.5 cm deep and 20cm diameter.
In a pan dissolve 1/3 cup of sugar in 1.5 cups water.
Start heat on the stove and cook on medium heat just to boiling add 1/2 lime juice. Add a small (ap.3cm) cinnamon stick
Peel pears.
Drop the pears one by one into the sugar water, keeping the heat on.
Cook them for 5-6 minutes and remove them from the heat keep them in the sugar water until cool. when cool remove them from the water and spread them on a kitchen towel or paper.
Prepare the cake batter
Making vegan egg mixture.
In the bowl add 2 tbsp gram flour.
Pour flaxseed jelly into it.
Beat it until it looks like beaten eggs
It becomes like this.
In this mixture
Add oil
cashew milk
vanilla essence
mix it well. keep aside.
In another bowl
Sift flour baking powder, salt, and baking soda.
Add sugar
mix well
Now we have both wet and dry ingredients.
Mix wet and dry mixtures using the cut-and-fold method it is a little dry so I use 1 tbsp more cashew milk. do not overmix it.
Set it into a greased cake pan.
Flatten it and tap to remove bubbles.
The pears are a little dried cut them in the halves.
take away the core.
Cut each half into horizontal slices without separating them.
Carefully lift each half and place it on the top of the cake batter in the cake pan.
After placing the pear halves they looked like this I placed 7 halves my pan was a little smaller. you can adjust them according to how they fit in the pan.
In between the pears, I sprinkled some chopped almonds. you can try any other nuts.
I found some red currants in the fridge, just a few placed to decorate.
Bake in a preheated oven around 180 C for about 40-45 minutes.
Done

Let it cool before transferring it to the plate.
Drizzle caramel sauce (made with pear water 2 tbsp and sugar 1tbsp)
on it
