Simple coconut pudding

We are harvesting a lot of coconuts here in India and try to use them in different ways. Almost every day, we consume one fresh coconut or dried coconut. It's difficult for us to sell them because people think we live in a foreign country and don't need money.

Understanding this mentality, we keep many coconuts for our own use. We regularly incorporate coconut milk, raw coconut, coconut desserts, coconut oil, and dried coconut into our daily meals.

This pudding is one I make often but today I took some photos to share it.

The pudding we make is very simple and easy. It doesn’t require much time if you have ready-made coconut milk on hand. However, I usually prepare fresh coconut milk when I need it, which takes a little time. Otherwise, this dessert can be ready in just half an hour.
**Greetings community, friends and food lovers. **
Ingredients:

1/2 liter coconut milk
2-3 tbsp powdered sugar
2.5 tbsp cornstarch.
1/2 tsp vanilla extract
1/4 tsp coconut oil
1 tbsp of any dry fruits optional
1 tbsp grated coconut optional
Making milk from fresh coconut.

peel away the brown outer skin from the coconut. and chop it into small pieces.

Grind it in a mixer or blender.

Use a strainer and strain the coconut paste. use milk for pudding and the fibers used to make bread, roti or chappati mix in flour to make a dough,

Pour the milk into a bowl.

Add sugar according to your taste. I used 3 tbsp powdered sugar.

Add the cornstarch.

Mix it thoroughly until there are no lumps.

Add vanilla

stir well.

Pour mixture into a saucepan.

cook it stirring constantly without forming any lumps.

Grease the mold using a few drops of coconut oil.

When the mixture starts coating the spatula turn off the heat

Pour into the oiled mold.

keep in the fridge for about 20 minutes
Before serving sprinkle some chopped nuts and some shredded coconut. garnish how you like. I placed one cherry on the top

Healthy snack, I'm sure it tastes very delicious and fresh.... we also often make it but we add a little palm sugar to the pudding.. and it tastes very good..

I do use palm sugar but this time I made it with sugar. :)

This is quite new to me, but I'm sure it's really delicious, I love the creamy look and coconut milk is really delicious so I can imagine how this must taste 😋

There is no particular harvest time they are ready by 2 months if I want to use them in cooking or for oil or dried coconut we wait for three months :)

That's interesting, it's different in my country.

That coconut pudding must be delicious, I'm already craving for it, I will surely prepare a similar one soon.

How nice that you always have so many coconuts, here in Venezuela we only see it seasonally and coconut oil here is really expensive.
