Hello, friends, food lovers, and community! Today was quite a busy day for us, as we were running from one office to another for some bureaucratic work.
I couldn’t believe how fast the day went by. By the time I got home, we were very hungry. I wanted to make something quick, so I prepared a simple fried rice dish, during my student life I used to make this often.
Easy quick, healthy, simple, and tasty.
Ingredients:
1 onion sliced
2 green Local paprika chopped
1 carrot sliced
2 spring onions chopped
1 cup cauliflower chopped
20 green beans cut into pieces
10 garlic cloves
2 cm ginger
1/2 lime
2 tbsp fresh coriander
1tsp peppercorn
1 tsp salt
2 tbsp coconut oil
1 cup basmati rice.
1 green chili
This amount of ingredients makes 2 adults full meals.
Here are all the vegetables nicely cleaned and chopped/sliced.
For seasoning use green chili, lime, coriander, ginger, garlic, pepper, and salt.
90%cooked basmati rice. Here in India, we get very nice quality rice. Which I missing In Norway since they stop exporting Indian Rice.
(I cooked 1 cup of raw rice which became more than 2 cups after cooking.)
In the pan poured coconut oil.
Roughly chopped ginger and garlic.
Added in the warm oil and sauteed for 1 minute.
Added onion.
While onion was cooking I chopped coriander.
After the onion turned translucent added all chopped vegetables.
cooked them for 2-3 minutes keeping their crunchiness.
Added freshly crusted pepper and salt.
Squeezed 1/2 tsp lime juice
Mixed well.
Added cooked rice
Chopped coriander.
And Done.
Nice with sliced tomato and onion.
simple and best dinner easiest and quick.
