sweet and sour vegetables with Maggi-noodles. For me
Just crunchy vegetables gluten-free for my husband.
Hello, vegan lovers! Greetings!
Today, I made sweet and sour noodles as my entry for @qurator's Hive Top Chef cooking contest, with the theme Sweet and Sour. Just as I was about to publish this post, the electricity went out, and our internet connection was lost. We rely on electricity for our phones and internet, so it was quite challenging. There was a significant issue in our area where an electric pole fell, taking down live wires. Because it was nighttime, they couldn't restore the power right away. It took almost two days before we regained electricity and communication with friends, family, and the Hive communities.
This post was prepared for last week's contest, but I don't mind publishing it this week.
It is healthy and can make a gluten-free version without using noodles.
Ingredients:
100 grams of green beans
1 small squash
1 spring onion
2 green paprika
2 carrots
1 slice of cabbage around 60 grams
2 onions
3 cm fresh ginger
50 grams pineapple
Ingredients:

All chopped vegetables
ginger slices/
green onion
1 tbsp cornstarch
1 tbsp jaggery
1 tbsp tomato paste
1/2 tsp salt
1/2 lime
2 tbsp tamarind chutney
1/2 tsp red chili sauce homemade.
2 tbsp coconut oil
1 tsp sesame paste.
mix chili sauce and tamarind chutney and add lime juice
then add tomato paste, jaggery, salt,
Mix it well and keep it aside.
In a pan pour coconut oil.
Add Ginger Julian's and sesame paste (it is optional.)
put vegetables one by one. onion, paprika, carrots, and squash
Add beans , cabbage, and pineapple
Stir them well on high heat so they can little smoky in taste.
Add onion greens and cook for a minute
Now add the mixture of chili sauce, tamarind chutney, tomato paste, lime, salt and jaggery.
In the same cup dissolve cornstarch with 2 tbsp water,
Pour the cornstarch on the vegetables and stir it continuously for about 2 minutes more
turn off the heat the sweet and sour vegetables are ready. serve it like this as an appetizer or use noodles to mix in. or use rice together.
In one portion I used noodles and in one portion I kept just crunchy vegetables.
