Hello, friends, food lovers, and community! Today, I'm glad to share a recipe called Thepala, a popular and traditional dish from Gujarat in India. People from surrounding states love it as well. Thepala can be enjoyed as a breakfast item, snack, side dish for a main meal, or even as travel food since it lasts longer than regular meals. It is tasty, healthy, and easy to make.
Fenugreek seeds usually take three weeks to be ready for harvest in green vegetable form.
It is fresh and organic just a 10-cent bundle of 300-gram clover-like leaves.
the vegetable Methi might not be familiar to Westerners/Easterners but we Indians love it. One main Ingredient, Methi or fenugreek greens is a healthy herb that is beneficial for overall health eg: a blood purifier, and blood sugar controller, a milk producer, lowering cholesterol, helping in hair health, and reducing belly fat. I don't get this in Norway so when I am here in India I use it often in our food.
After buying from the market, you need to clean it properly and remove the roots.
Wash it thoroughly.
Drain water and keep it aside.
chop it finely.
chop onion and chili finely.
Ingredients;
1 cup finely chopped methi
1 cup wheat flour
1/2 cup gram flour
11/4 tsp turmeric
1/4 tsp garam masala
1/2 tsp salt
1 tsp ginger garlic paste
2 pinches of chili powder
finely chopped onion and chili
3-4 tsp coconut oil
In a bowl mix the chopped onion, chili, all spices, salt, and gram flour,
Add methi
Mix thoroughly using your hand.
When it starts releasing moisture
Add wheat flour
When flour is mixed with all the ingredients
Gradually add some water to form a dough.
The dough should be easy to roll out into flatbread. Cover and let it rest for 5-6 minutes.
After 5 minutes, divide the dough into appropriate sizes and make round balls. I made balls the size of lemons.
Dust the rolling board with flour and roll the balls into circles, making them as thin as possible.
Around 2mm thin
Cook them in a skillet or flat pan.
Sprinkle a few drops of oil on the top while they're cooking.
Flip it and cook the other side when golden spots appear it is done.
repeat to make all of them.
Serve it with date chutney or tomato ketchup. I like to use some fresh tomato and cucumber slices as well.
