In my house, everyone loves to cook and eat any random vegetable. There aren't that many people in my house, but the ones who are there, they relay a lot upon vegetables and fruits.
Bitter gourd is a vegetable that is eaten by very few people in Pakistan because the taste of bitter gourd is too bitter to eat. Just as its name begins with bitter and ends with bitter 🤧😂 In our house, bitter gourd is made in two ways. One method is that which we make very rarely but in this way the bitter gourd does not taste bitter. That method is to open the bitter gourd and without cutting it, add a mixture of onion inside it and fry it but the method I am using today is the second method in which I prepare the bitter gourd by cutting it.
So let's make it together.
So let's start with the easiest thing, first of all, you have to take out your beloved bitter gourd from your refrigerator, wash them well, after washing, drain them, after draining, you have to take out the bitter gourd in two pots, then you have to start peeling them gently.
Because the peel is tough, you take it off.
Once the skin has come off the top of your prepared bitter gourd, you need to cut it from the inside and divide it into two parts.
When you cut the bitter gourd and divide it into two parts, you will see that there will be either large seeds inside it or a white part like this. If you see such a soft white part, then cut it in the same way. If you see hard seeds inside it, then take them out and cut the bitter gourd.
Once you have cut it from the center, you need to cut the bitter gourd into small pieces with the help of a knife, as I am showing you here. This dish becomes easy to make and its curry becomes very tasty when mixed with onions.
All the cutting is done, now you have to salt the bitter gourd. Salt is applied so that the bitterness inside it is reduced a little.
So friends, don't forget to salt your dear ones who are always bitter. I'm just kidding. Don't salt anyone. Applying salt on a burn causes pain and inflammation. Don't let this happen. Don't follow my advice and get into trouble.
Okay, leave all this behind. Where were we?
We were salting our bitter gourd. After applying salt, you have to leave it for half an hour. Some people keep it in the sun to make it crispy, but you can also keep it in the shade.
After half an hour, you have to wash the bitter gourd thoroughly and remove the salt from it, after which you have to put it aside to dry again.
Now you have to start the process of making it. First of all, you have to take the oil as per your requirement, put the bitter gourds in it and start cooking it on low flame.
Look here, the bitter gourds have turned brown. You have to cook the bitter gourds until they turn brown.
During the browning process, you have to move your hand quickly and chop the tomatoes and onions. When you have chopped both the tomatoes and onions, you have to add the tomatoes and onions to this mixture when the bitter gourds are brown.
Then you have to add salt, turmeric, chili flakes and chili powder as per your requirement. You can add either chili flakes or chili powder. It depends on you whether you like to eat less chili or more chili.
I have shown the amount I have added in a table spoon up. The amount of spices I have added is clear in the pictures.
Now all your ingredients have been added to the curry, now you just have to fry it for a while, after that your curry will be ready, you will need 10 minutes to fry it.
