Last night I made lunch for today, this is just what I am here to share with you. We are always looking for, at least I am :), a nutritious option but at the same time can be done in the shortest time possible. I have been inspired by a woman who has a Youtube channel where she shares her recipes (however she adds my own touch, starting because I added some ingredients and omitted others that I didn't have), you can find her as sarah's Vegan Kitchen.
Ingredients:
Red cabbage ¼
Lettuce ¼
Tomato 1
Handful of leafy greens
A personal portion of soy meat 90 gr (these, I bought ready-made, but you can make them)
A handful of nuts
For the sauce
Tablespoons of Chinese sauce 2
Vanilla essence 3 drops
Apple cider vinegar ¼ tbsp.
Small lemon juice1
tablespoon panela 1
The first thing I did was to chop the cabbage and lettuce into small pieces, (in the picture it looks easy, but it really took a long time to chop everything), I also chopped the green leaves, all this I put in a bowl with water and vinegar, in order to disinfect. After 5-10 minutes rinse, and that's it.
While I let the vinegar work, I removed the skin from the tomato and sliced it.
To fry the soy meat, first leave the pan on the heat, add oil, once it is hot enough, add the meat (I personally like it crispy, so as the crispiness is proportional to the time, I leave it on medium-low heat for a while).
For the sauce mix 2 tablespoons of Chinese sauce, 3 drops of vanilla essence, ¼ cup apple cider vinegar, the juice of a small lemon, 1 tablespoon of panela, mix with the cabbage, lettuce and greens.
Serve, and taste! I added nuts on top of the tomatoes). Right now after uploading the post I'll have lunch, I hope it's delicious hahaha
