Saludos querida comunidad, vengo por acá a compartirles una receta que hice el día de hoy para el almuerzo, de verdad que quedó delicioso, además de nutritivo saciaron y satisfacieron el apetito en mi hogar, a todos les gustó.

Mis deliciosos muffins de quinoa con zanahoria los realicé con los siguientes ingredientes:
I made my delicious quinoa and carrot muffins with the following ingredients:
Ingredientes | Ingredientes |

1 taza de quinoa | 1 cup of quinoa |
1 Zanahoria | 1 carrot |
1 pimentón | 1 paprika |
2 cebollas pequeñas | 2 small onionsn |
Cilantro | coriander |
1 cucharada de chía | 1 tablespoon chia |
Aceite de coco | Coconut oil |
Ajo | Garlic |
Sal | Salt |
Condimentos | Condiments |
2 cucharadas de agua | 2 tablespoons of water |
De condimentos utilicé comino y orégano, pero tú puedes colocarle los de tu preferencia, el ajo y la sal son al gusto.
For seasonings I used cumin and oregano, but you can add whatever you prefer, garlic and salt are to taste.
Modo de preparación / Preparation mode
- Remoja la quinoa y ponla a cocinar en la estufa hasta que hierva.
1. Soak the quinoa and cook it on the stove until it boils.
2- Pon a hidratar la chía para que nos ayude a compactar la mezcla ya que ella sustituye al huevo.

3- Pica en trozos la cebolla, el pimentón y el cilantro

4- Raya la zanahoria.

6- Incorpora todos los ingredientes en una procesadora de alimentos o licuadora, yo lo hice en dos partes, añade un par de cucharadas de agua para no forzar la licuadora.

7- Coloca la mezcla en fuentes para cup cake y llévalas al horno precalentado a 175 gr por 45 minutos (De todos modos observa y pincha con un palillo, si sale seco están listos tus muffins, recuerda que eso depende de la cantidad de líquido y la potencia de tu horno)
7- Place the mixture in cup cake dishes and put them in the preheated oven at 175 g for 45 minutes (In any case, observe and prick with a toothpick, if it comes out dry your muffins are ready, remember that this depends on the amount of liquid and the power of your oven)
8- Retira del horno y deja reposar antes de desmoldar para que no se rompan, puedes acompañar con arroz, papa o yuca y una rica ensalada, genial para un almuerzo.
8- Remove from the oven and let it rest before unmolding so that they do not break. You can accompany it with rice, potatoes or cassava and a delicious salad, great for lunch.
