African salad recipe (Vegan)

Exploring new flavors in the kitchen has always been an exciting thing for me and it's a joyful thing to make something that is enjoyed by everyone, what better joy could I have?

Ok, so today were making the vegan version of Abacha! A favorite local Nigerian recipe originated from the Igbo tribe.

Abacha, which is fondly called African salad, is a cherished delicacy in Nigeria, particularly among the Igbo people of the southeastern region. The abacha itself is made from processed cassava and it is a very delicious meal when combined all the mouthwatering ingredients.

Here in this post I'll share with you how I was able to make this! Below you can see a list of all the ingredients I used:

The ingredients

2 handful Abacha (African salad)
1/2 tablespoon Black pepper
1/2 tablespoon Ground nutmeg
2 cooking spoon Ngu (liquid potash)
6 Garden eggs
1 handful Ugba (African oil bean)
2 Onions
7 pieces of Chili pepper
1 cooking spoon palm oil
Utazi leaves (amaranth globe )

Procedure

I Start by soaking the Abacha in warm water for a few minutes to soften it. Once it’s soft, I drain the water in a sieve and set it aside.

Next I slice my veggies into desired shapes. I slice onions, garden eggs, chili pepper and Utazi leaves and set them aside.

Then in a large bowl, I mixed the palm oil and Ngu(liquid potash) until it forms a bright orange paste.

Added the black pepper, ground nutmeg and some salt then stir well to combine.

Next I add the Ugba (African oil bean) to the mixture and stir

Then it was time to add the Abacha (African salad) to the mixture and stir properly to mix

After that we start adding the toppings atop it while it is served in a plate

Do you know see how nice and colorful it looks, I so much love the colors in this dish and the taste is just as amazing!!!

As always, I love exploring more and more in the kitchen and I certainly loved how his one turned out both in taste and presentation. It’s a dish I’d gladly make again, not just for myself but to share with friends and family. Have you tried Abacha before, I'd love to know!
