Cooking is always fun for me especially when I can make really tasty meals just by making use of the stuffs I already have in the kitchen.
Today I'll share with you how I made porridge beans and plantain, one of Nigeria's favorite. Porridge beans especially with ripe plantain is a special kind of combination here especially for people like me who don't like eating beans much like that, so adding ripe plantains to it is very delightful and makes it really tasty. It is also packed with essential nutrients that is good for the body.
So this only requires just a few ingredients.
Ingredients
- 1 ripe plantain
- 1 cooking spoon oil
- 1 cup of beans
- 5 chili pepper
- 2 small carrots
- 3 fresh tomatoes
- 1 medium size onions
The carrots and tomatoes in this recipe are very optional. I just included them to add color, texture and a fresh flavor to the meal, it is not common to add them.
- Wash beans thoroughly and pour them in a pot of boiling water. Add salt to it
- Cut onions, tomatoes, carrots and plantains to smaller pieces. Grind pepper to paste
- Check if the beans is soft, take one out and check if it's soft by pressing with your hands
- If beans is soft enough, add the plantains and cover for a few minutes
- Next add the oil, onions, pepper and tomatoes to it, stir properly and cover it

- Next add the carrots and cover for a few seconds

After that the food is ready to be served!
Can you already imagine how it'd taste, well yes it is a very delicious meal, it tastes sweet and I love it. The rope plantains are heavenly in the beans and I could eat this over and over without getting tired. I hope you can try it too!
I got one serving with the quantity of ingredients I used, so adding more beans and plantain will get you more serving. It takes about 40-50 minutes to complete this meal because of the time it takes this particular beans to soften.
