Delicious and Crunchy Coconut Rice Recipe

Cooking is one of my favorite ways to express creativity, and this time, I set out to make a coconut rice dish that would be both crunchy and visually appealing.
I wanted a really crunchy coconut rice that will be very delicious and nice looking. So I made this recipe I'm going to share in this post. I bought enough carrots and coconuts to achieve what I wanted.

In this post, I’ll share the step-by-step process for making this amazing coconut rice, the ingredients needed, and the little tweaks I made to achieve perfection. This recipe is simple yet flavorful and is perfect for anyone who loves rice dishes with a tropical twist.

Here's what I used to prepare the meal:

Ingredients

  • 1 medium sized coconut
  • 14 balls of fresh tomatoes
  • 3 carrots
  • 1 medium sized onions
  • 10 Chili pepper
  • 1 cooking spoon vegetable oil
  • 1 piece medium sized ginger
  • 1 piece of fresh tomatoes
  • 14 pieces of green peas
  • 4 cups of rice

Preparation

I started making this meal by cracking and grating the coconut 🥥 and set aside.
I began by cracking open the coconut. I Separated the meat from the shell, and grate it finely. Then I set the grated coconut aside, as I'll need it for both coconut milk and texture in the rice.

I Rinse the rice thoroughly with warm water to remove excess starch and set it aside.

Diced the onion, green peas, tomatoes, and carrots into small pieces.

Using a mortar and pestle, I pound the ginger, turmeric, and chili peppers into a paste.

Next I extracted the milk from the coconut chaff by adding a small amount of warm water to the grated coconut and squeeze it to extract the milk. I used a fine sieve to strain the liquid for a smooth consistency. Then keep the coconut chaff aside for later.

Set everything aside, and ready to start cooking

Next I heat a pot over medium heat and add one cooking spoon of vegetable oil. Once the oil is hot, sauté the chopped onions until they become translucent.

I added the fresh tomatoes too, stirred properly, then I added my ginger and pepper mix.

I then pour the extracted coconut milk into the pot and mix it thoroughly with the tomato and spice mixture.

After pouring in the milk, I stirred it to mix properly. Then I added the mixed natural spices to it.

I then stir the rice into the pot, ensuring it’s fully coated with the coconut milk mixture. Add two cups of water, stir gently, and cover the pot to allow the rice to cook

Once the rice was almost cooked and the water was mostly evaporated, I sprinkled the coconut chaff over the rice

Added the green peas

Then the carrots

Cover and let the vegetables steam for a minute or two to retain their crunchiness and nice color, then stir them properly.

Next I stir in small, diced pieces of fresh coconut for added crunch. Allow everything to combine for a minute, then turn off the heat.

To make this dish even more exciting, I plated it creatively for a Hive post. I sprinkled additional coconut pieces over the rice and decorated the plate with fun designs using
The result was a colorful and appealing meal that tasted as good as it looked!

This crunchy coconut rice turned out exactly how I imagined it—rich, flavorful, and perfectly balanced.
It’s easy to make, uses simple ingredients, and it delivers a good burst of tropical flavor in every bite.
