Greetings my friends, I hope you are well, and can spend a quiet weekend with your loved ones, today I want to share a new recipe, another vegan dessert, at home they have been a success haha, you love little Micaela , so I must take advantage, we are in school days, and extra academic activities, and I need snacks, and I think these desserts are ideal, today I share with you how I prepare a delicious coconut cake, with prune jam, I think this dessert It is a perfection of flavors haha, at home I love coconut and plums, I had both in my refrigerator, so I decided to combine them, and the truth is the result was a complete delight, we started.
Coconut Cake and Prune Jam
Ingredients:
1 Cup of wheat flour, you can use oat flour, or whole grain flour, whichever you prefer, or have at home.
1 Cup of grated dry coconut.
3/4 of brown or white sugar. I used brown sugar.
1/2 Cup of oats.
1 Tablespoon of baking powder.
1 Tablespoon of vanilla.
Two tablespoons of coconut or sunflower oil.
1 Cup of water, or vegetable milk.
For the prune jam, we need two tablespoons of brown sugar, half a cup of prunes, which we are going to place in a container with water to soak, and a few drops of lemon.
Preparation:
1- In a bowl, add the flour, previously sifted with the help of a sieve, the oats, the baking powder, sugar and mix well.
2- Add the grated coconut, vanilla and coconut oil.We incorporate everything well.
3- We add the water, or vegetable milk, little by little, until we achieve that homogeneous mixture. Youse a little more than a cup.
4- Add the mixture to a previously greased and floured baking pan, and place in a preheated oven for approximately 30 minutes, or when we see that the cake is golden brown.
5- While our cake is baking, we prepare the jam, which is very easy to make, we add the plums with the water in which they were soaked, in a pot, we add the sugar, and we cook over medium-low heat, as they As it cooks, we crush the plums, when it has a firm consistency, we add the lemon drops, stir for a few more minutes and lower the heat, let it rest.
6- After the baking time of the cake has passed, we remove it from the oven, unmold it, and let it rest until it cools before adding the jam on top. Once we add the jam, we can enjoy this delicious flavor.
